What Are Adaptive Cutting Boards?
An adaptive cutting board is one that has been redesigned with raised edges, spikes and suction cups. You may also hear them be referred to as a paring board.
Adaptive cutting boards are excellent for anyone who only has the use of one hand.
For example:
- the raised edges allow you to butter a piece of bread with ease.
- the spikes hold your food in place so it can be cut or peeled easily.
- suction cups hold the cutting board tight to the counter so it won’t move.
In addition to being ideal for those who only have the use of one hand, the boards can be used by anyone who has difficulty gripping items. They also work well for low vision users.
Even people without disabilities love these adaptive cutting boards because it makes peeling, slicing, grating and preparing food so much more convenient. Cooking is safer and more comfortable. It gives independence back to someone who for whatever reason only has the use of one hand or who has limited dexterity.

This cutting board is ideal for those who lack the used of both hands, or only have one hand available. It is easy to grip and has a raised edge to prevent items from slipping off.
This one handed cutting board seems to be more durable than the one I described above. It has the guards on the corner to hold things like bread and has aluminum nails to hold food for slicing, peeling, etc.
It measures 8 1/2 x 8 1/2 and has four rubber suction feet to hold it securely in place. The specifications state that it is made of aluminum and is dishwasher safe.
At the time of this writing there are only a couple of reviews so my assumption is that this is a new product. The reviews were quite recent. Both of the people who wrote reviews gave it a 5 star rating!

This Parsons one handed cutting board is made of food grade polypropylene and is latex free. This board is 12 x 12. It is a little larger than some of the other adaptive boards. As one reviewer put it – it is large enough for just about anything.
This Parsons adaptive cutting board has some of the best reviews I have ever seen. The complaint of the worst reviews, which by the way were 3’s and 4’s, were that the suction feet worked too well! Because they stuck so well to the countertop, it was difficult for some people to get the board “unstuck” from the counter. However, other people mentioned that they had no problem being able to lift it.
One person stated that they own several cutting boards designed for one handed use and this is by far their favorite. Some of the things they liked were that the corners allow bread crumbs and food particles to be easily disposed of. Another mentioned that most boards only have two spikes and this has three. They felt the three spikes made the food more secure for cutting.
Single Handed Cutting Board
This single handed cutting board is an Amazon’s Choice. I am not really sure what sets it apart from the others to make it qualify for this award. I do see there are more reviews for this product so that could be the reason. Everyone seemed to like the way it works. However, some mentioned that it was really small. It measures 8 x 1.2 x 8.6 inches.
It appears to me that the guards on this board are set further in than some of the other cutting boards. In the product description it says that the corner guards are removable. That could be beneficial to give more space on the board when you are cutting. Â
